Vinification
Traditional method with secondary fermentation in bottle; minimum 18 months on the lees. Brut Nature – no added sugar.
Tasting profile
Color – light gold; fine, persistent bubbles.
Aroma – lemon, lime, apple, pear, floral and mineral nuances, almond and fresh bread.
Palate – dry and taut, with excellent balance between acidity and creaminess; long, clean finish.
Serving
6–8 °C; flute or tulip glass.
Food pairings
Seafood, fish, sushi, tartares, tapas, jamón, hard cheeses; also excellent with Bulgarian specialties such as Black Sea mussels and fresh salads.
